Toasty Pumpkin Granola

BOY am I glad it’s Friday!  As Calder might say, “awesome, wow!” (we’ve been listening to a lot of the Hamilton soundtrack lately).  So yes, FRIDAY!

This particular Friday means two things: one – I’m on a flight east to start some early Thanksgiving celebrations with my family (hooray!) and two – weekend baking!  Double hooray!!

This weekend, I challenge you to make your own granola.  It’s easy (the measurements below aren’t set in stone, so take any liberties you like), satisfying, and this pumpkin version in particular will make your house smell like the tiny fairies of Autumn sneezed warm spices everywhere (and I say that with the utmost respect/admiration for those guys).

One batch of this stuff will yield you a healthy, delicious and très seasonal breakfast (either with milk, yogurt, or sprinkled over a warm bowl of oatmeal) for the upcoming week and beyond.  It makes a great gift, and also freezes nicely for future breakfasting/snacking.

Roasted Spring Chicken with Radishes & Potatoes (& Green Vinaigrette)

Have you roasted a whole chicken yet?  It’s time.

Knowing how to confidently roast a chicken is up there on the list of essential life skills — you know the one — The Things A Person Should Know.  (You don’t know this list?  Uh oh.  That’s the first thing on the list — know about the list.  …You’ll catch up.)

Actually, knowing how to roast a chicken is right up there with knowing how to launder your own clothes, fix a clogged shower drain, tip appropriately — in fact, pulling a beautifully bronzed, crisp-skinned, whole chicken out of your oven is probably less important than remembering to schedule your own dentist appointments, but, one could argue, more important than proper eyebrow care.  (I see your perfectly-sculpted eyebrow raise, missy — I stand by that statement.)

The great thing about a classic roasted chicken is that, though it looks involved and sophisticated, it’s actually quite simple (and relatively hands-free), so roasting a whole bird is as appropriate for Sunday dinner (or a special Mother’s Day feast!) as it is for the weeknight hustle.

So let’s get roasting!  Springtime is the perfect season to toss a chicken in the oven and play around with bright flavor combinations, like creamy new potatoes, crisp radishes, and a vibrant, herby vinaigrette.

Get out there!  Have no fear!  Snag yourself a (local! free-range!) bird, a mess of herbs, and a fat bunch of radishes, and you’re halfway to dinnertime perfection.

Gingery Pork Meatballs

Your meatballs!  As promised.  I”ll cut right to the chase here: these are good.  You’re going to want to make them right away.

These little lovelies are meaty but light, flecked through with bits of fresh cilantro and ginger, full of brightness and zip, respectively.  And some spice, too, because I know you like to keep things interesting.  Maybe you’ll make these for your Super Bowl (slash Puppy Bowl, who are we kidding) party?  They’re great on their own, but I’ve also been throwing them into a simple broccoli, green curry coconut soup (recipe coming soon), where they feel like a hearty and healthy meal.

Perhaps notably, these are the kind of straightforward meatballs that skip any fillers like breadcrumbs or cheese, so they’re gluten- and dairy-free, which normally wouldn’t be my thing but which recently was kind of my thing, on account of the fact I was trying out that Whole 30 situation that’s going around.  I’ll just say that it was nice while it lasted (a Whole 13 days, oops) but we’ve since parted ways and I’m okay with it.  I’ll still be eating these meatballs.

(Also, these are a ONE PAN deal! In honor of easy deliciousness but also in honor of my new book, which comes out on Tuesday.  NO BIG DEAL HOLY CRAP.  Have you ordered your copy yet?  Please?)

Sheet Pan Halloween Candy Bark

Happy Friday, peepsicles!

We’ve only got a few days until Halloween, so I thought you might like a SUPER easy and festive weekend baking project — candy bark!  All dressed up for hallow’s eve.

The only ingredients we need for this gem of a treat are some chocolate chips of your choosing, a handful of Reese’s Pieces (some for the bark, some for your face, you know the drill) and a boatload of Halloween-ish sprinkles.  Sprankles.  And some candy eyeballs, probably, for spooks and giggles.

This might be the simplest recipe I’ve ever posted, so get your sheet pans out and get barking.

Quick Asparagus & Artichoke Pizza

I feel like I’m always “saving” my good clothes – the cute swingy tops and dry clean only dresses and rompers and jeans that fit perfectly – just for the really right time to wear them.  As a result, I often find myself out and about in the world, kicking around in ratty leggings (the ones which are thinning in places, oy) and ugly tee shirts because all of the good clothes I own?  I’m saving them.  Keepin’ em fresh.  For when it really counts!

Am I the only one who does this?  It’s insane.

Luckily, I’ve decided that our honeymoon – or, more specifically, PARIS – is the right time for a person to dress like she means it.  But now I feel like I’m out of practice!  I’m fumbling around with this top and those pants and what about these shoes?  What goes together, anyway?

HELP.  Everyone here is #chic and my only instinct is to choose stripes.  Like, all the time.  I’m not sure it’s cutting it here on l’Île de la Cité.

At least I can make pizza?

I made this the other night (stateside), when I was short on time and long on asparagus.  I bought a ball of dough from Whole Foods and went to town.  Spread with herbed goat cheese, crisp asparagus, and tangy artichoke hearts, it was an unexpected and satisfying weeknight dinner.  Ben and I polished off half the thing in one sitting, and the leftovers made an excellent cold lunch.

Egg in a Heart in a Bread

Whether you’re single or attached, Valentine’s Day is kind of the worst.

For the single, it’s a quiet kind of pity party, a big fat reminder of singledom (and what’s so bad about that, anyway?), and for the coupled, it’s a day of weirdly forced romanticism – diamond commercials (gag), expectations (flowers, at least), cheesy fixed price menus (molten lava cakes!) and exorbitant prices all around.  Ugh.

And yet.  I do love an excuse to bust out the heart-shaped cutter.  Like a heart-shaped, egg-filled piece of toast!

Or four.  On a sheetpan!  Obviously.

The nice thing about these is that they all cook at once in your oven, so if you’re hosting a Valentine’s Day brunch or have a bunch of kiddos to feed, you don’t have to stand over the stove and make these one by one.

But if they’re not your thing, you could always just go with chocolate.  Or cookies.  Or pizza!  But you know what they say… every kiss begins with Eggs in Hearts in Breads.  Or something.

Superbowl Rundown + BBQ Chicken Nachos

So let’s just get this straight.  The east coast is trapped under an enormous blanket (okay, maybe more like a light sheet) of snow, and the SUPER BOWL is this weekend?!?

Yeah.  We’re going to need some snacks.

Commence Snackpocolypse!

In a snowstorm slash on game day, homemade snack mix is always appreciated.

Baked Brie & Berries

Guys!  We are T minus 2 days until the new year.  Twenty-fifteen holy smoooookes.  Should we, like, eat some cheese or something?

Here’s one last Holiday Mollygram, the last of 2014, anyway, with a recipe for Baked Cheese & Raspberries!  It’s a riff off of a recipe in the appetizer section of my cookbook (in the book it’s Baked Brie & Strawberries, p.9).  Whether you use raspberries or strawberries (or pears or blackberries or whatever), it’s a great recipe to ring in the new year.
