Deb’s Plum Cake

Leave it to Deb to get me back in the kitchen!  I mean, when that lady says “jump”, I’m the first to ask “how high?” so it stands to follow that when Deb says “make this plum cake,” I know it’s in my best interest to bust out the butter and search for some plums.

Except, as luck would have it, I didn’t have to search very far, because my neighbor, Martha, happens to have a plum tree in her yard, and Martha also happens to be quite generous (in general, but also specifically in plums), so as it happened, just as soon as I got it in my head to make plum cake, there was Martha, bag of plums in hand, to save the day.

The cake lives up to the hype.  It’s a cinch to make (you could easily do it in the short span it takes for, say, a 6-month old to wear himself out on his play mat… just saying), looks beautiful, and tastes like it should — perfectly sweet, warmly spiced, and happily damp with fresh plum.  I find it a perfect segue from summer to fall, using both the last of the season’s sweet, juicy fruit, and also a generous dash of warm cinnamon.

I actually made two of these plum cakes in one day — one for some neighbors who just welcomed their own new babe, and one for my own family to gobble up in a single (yep, just one) day.  What I’m saying is, we need more plum cake.  (Once plums are gone, I may give this another try with pears, although I don’t think Martha has a pear tree.  Shoot).

In other news, I feel like I’ve typed “plums” one too many times today and now I can’t look at the word without feeling like it’s spelled wrong.  Plums.  PLUMS.  Plummmmms.

I think it’s time for me to go.

And as an aside, we haven’t given Calder much solid food yet but we let him sort of gum and suck on a (ahem) plum and it was both amazing and hysterical.  Boy loves him some PLUM.

Strawberry Lilac Pavlovas

Happy Monday, friends, and May the 4th be with you!  Today I’m just bursting with bright, springtime bloominess (not a word but should be) because there’s an Edible Flower Potluck petaling up (also not a thing) the interwebs!

This gorgeous, flower-filled potluck started with Renee (as lots of good things do), and I have to say, I’m not sure a more beautiful (if virtual) potluck ever existed.  Just look at all of these gems!

Blond Bottom Coconut Cream Pie

Get ready to pull out all of your best emojis, peeps, because it’s the return of Pie Day Friday!!!!

Except it’s actually PI DAY Friday (in anticipation of tomorrow, March 14th), which is a similar concept, but also pretty different.  More numbers.  Infinity of them, to be exact.  But also more pie!

Which, I think we can all agree, is a good, good thing.

The first time I can remember eating coconut cream pie was in Charleston, South Carolina which, if you’re in the business of eating coconut cream pie, it turns out is a good place to be.  It was summertime, a year or so after college and mom, dad, Casey and I (where was middle sis Emily?? Did she opt out or did we forget her?  It’s really hard to say) piled into a booth at Jim ‘N Nick’s.  Before we paid the check but after we stuffed our faces with thick slices of barbecued brisket (and weren’t really sure we could handle any more), dessert arrived.  A single slice of coconut cream pie, billowing with fluffy mounds of custard and cream, as cool and smooth as a southern summer’s day is hot and sticky…

We dug into it and just looked at each other, eyes wide, mouths working.  Because THAT was some pie.

This one’s got the same sweet, toasted coconut flavor, the same piles of cooling custard and cream, plus an extra, blond layer of salty caramel, just to sweeten the deal.  It’s still a balanced slice, though, because instead of using sweetened coconut, we call for unsweet.  (What goes around comes around, as Justin Timberlake said that one time).

Lemon Meringue Tart

It’s Post-Christmas Pie Day Friday!  A.k.a Boxing Day, a.k.a let’s just go with the pie because what even is “Boxing Day?”  Someone in Britain made it up I think?  I just know it has literally nothing to do with boxing.  So.

Lemon Meringue Tart!  This feels right for today.

(FYI, in the realm of Pie Day Friday, tarts are fair game.  Thank goodness).

This lemon number is extra tart and creamy, with a sweet cap of smooth, torched meringue.  (It’s the torched meringue that gets people ooh-ing and ahh-ing, yknow?)

AHHHHHHHH.

There are three main components/steps to get this thing up and running (into my/your mouth): crust, curd, and the aforementioned meringue.  Crust is easy (and, if you want to, you can use store-bought — I won’t tell).  Lemon curd is simply a matter of gentle heat, steady stirring, and then straining through a fine sieve.  And meringue?  A hearty whip whip whip and we’re pretty much there!

Can’t you see this beauty going down smooth with a little bubbly, and wow-ing everyone on New Year’s Eve?  I can see it.  The end of 2014 is going to be tart and sweet and great.  Cheers to 2015!

Apple Crumb Pie

It’s Pie Day Friday again!  Thank goodness.

This week in Seattle has been pretty dark and rainy and a little bit tired, too, so a fat slice of Apple Crumb Pie seems like the right thing to do today.

I brought this pie to a big family dinner last weekend.  All of the cousins can’t be together on Christmas, so we celebrated a few weeks early with big plates of homemade macaroni and cheese, fake Santa beards/reindeer antlers, and plenty of pie to go around.  Plus ice cream, because warm pie duh and also because Christmas.

I love the warmth and comfort of homemade apple pie.  On a chilly, windswept and drizzly day, is there anything better?  Flaky, all-butter crust meets spiced and yielding apples meets crisp and oat-y crumbles.  Say it with me: YES PLEASE.

And I love how easily this pie turns from dessert into breakfast, without even batting an eyelash.  It just makes sense and feels right so let’s just hold hands and eat some pie, okay?

Salty Chocolate Cream Pie (+ Giveaway!)

It’s a special edition of #PieDayFriday!  Today I’m bringing this salty chocolate cream pie to a Friendsgiving Potluck hosted by Renee at Will Frolic For Food, and featuring J. Q. Dickinson Salt Works!

You know, just in case you didn’t get your fill yesterday (#thanksgiving).

…What?  More pie is always a good move.

This was actually my first-ever attempt at a chocolate cream pie, and I’m prettyyyyyy pleased with how it turned out.  There are three different components at work here, all of which are surprisingly easy to pull off.  One: dark chocolate cookie crust.  Crush and mix.  Easy.  Two: creamy chocolate pudding.  The most involved step of all (melt, whisk, boil, strain), but still, easy.  And three: fresh whipped cream.  Whip whip whip.  Eaaaasy street dot com!  Plus extra salt for flavor and a small avalanche of chocolate shavings because we’re not savages, jeez.

As I mentioned above, this virtual Friendsgiving celebration is sponsored by J.Q. Dickinson Salt Works, a rad company out of West Virginia that harvests super fresh, clean-tasting sea salt (from an ocean source that flows underneath the WV Appalachians, OBVI), and they were kind enough to provide me with an extra jar of their delicious sea salt to give away!

(Sheet Pan) Apple Galette

YUP, it’s another sheet pan recipe!  It seems I just can’t help myself.  I figure you can’t serve your turkey roulade without a hefty slice of something sweet alongside, amiright?

Apple Galette, hello!  You are easy (sorry, girlfriend).  You are delicious.  You are vaguely French.  You go well with a drizzle of salty caramel.  You will feed a crowd this Thursday, and you will look good doing it.  I’m going to make the ish out of you!  And top you with a pretty pile of whipped cream.  …Platonically.  (Weird.)

When making a galette, keep in mind: perfection is not the goal.  Galettes are forgiving. Messy is fine. We can call it “rustic” and serve it for company. Tender crust, warm apples with sugar and spice, all topped with a pile of melting ice cream (or whipped cream, as the case may be)?  Let’s do this.

I’ve got so much to be thankful for this year, starting with a fat slice of apple galette and ending with a new cookbook, new husband and, not least of all, my ever-amazing group of family and friends (including you!) — thank you, thank you all.

Torched Marshmallow & Sweet Potato Pie

This.  This!  THIS is what #PieDayFriday is all about.  Custardy and sweetly-spiced sweet potato pie, tucked into a buttery gingersnap crust and topped with too much torched marshmallow meringue.

…Yep.  Marshmallow meringue.

Y’KNOW?!?

I’ve always been a straight pumpkin pie kind of girl (side of whip), but I figure I’m 30 now, and it’s high time to give the sweet potato a chance.  Turns out it’s a seamless transition.

Subbing sweet potato for pumpkin in pie isn’t an earth-shaking departure, flavor-wise (our familiar pumpkin pie spices are ever present), but I know some people have strong opinions about the merits and downfalls of each.  Personally, I am not one of those people.

I’ve actually heard that the best method for this kind of pie is to use butternut squash. Maybe next time I’ll try to distinguish this pie as SWEET POTATO by subbing out some of the traditional pumpkin pie spices, or adding a drop of molasses, or using heavy cream instead of evaporated milk?

Marionberry Pie

It’s POTLUCK day!  On the interwebs.  I’m talking about the #SoLetsPigOut Potluck, a virtual get-together hosted by two beautiful and talented women, Em & Gina, who decided it’d be fun to gather their interwebs friends and collect a heap of recipes for one fantastic midsummer celebration.

Have you ever been to a virtual potluck?  It’s the same as a regular potluck, except you can show up pants-less and no one will be the wiser.

Not a bad deal, overall.

My contribution to the party is pie!  Because pie makes friends wherever it goes.  And I like friends.  And pie.

As a recent transplant to the Pacific Northwest, marionberries are new to me – have you heard of them?  Or tried one?  They’re a variation of blackberry, indigenous to the state of Oregon, and they’re so, so good.  Plump and juicy and sweet, with some tartness thrown in for good measure.  I’ve seen them popping up in goodies all over the place here (muffins, scones, smoothies, jams, smooth jamz, etc.) which makes sense because they’re in season just now.

But I wanted in on the fun and, after a glimpse at the latest cover of Bon Appetit, I knew a pie was in order.

I used frozen marionberries because I found a reasonably-priced enormo bag of them at Whole Foods, and most of you won’t be able to get your hands on fresh ones, anyway, so let’s embrace the frozen berry!  They make for one fantastic pie.

Roasted Rhubarb

IMG_2684 Last weekend I decided to take a trip to the Ballard farmer’s market – as a newbie to the city of Seattle and person who generally likes food, I’d heard this was a must-do.  So I was excited to wander over on Sunday, empty-basket in hand, as the sun peeked out from behind the drizzle.

I’m here to report that the outing was, indeed, a must-do.  Yes, the produce and flowers and prepared food are fantastic (salmon sliders, hello).  Yes, I did get my hands on a huge arrangement of gorgeous flowering quince branches.  I bought freshly canned tuna, a handful of sunchokes (more on those later) and some broccoli rabe, a big bag of arugula, a gigantic leek and bunch of firm, bright pink stalks of rhubarb.  It was awesome.

But!  But.  I had just bought my beautiful branches and was sidling over to the honey booth when — HEY!  I know that little girl.  How do I know that girl?  She’s all cheeks and dark brown curls.  She’s dancing (adorably) in front of the bluegrass trio by the curb.  How do I know her??

OH RIGHT, I stalk her mom on instagram!  Yes, correct.  The little girl was baby June, daughter of Molly Wizenberg (she of Orangette), who was also standing right there.  At the market.  Next to her husband (who runs one of Seattle’s best restaurants and bars).  Next to me.

um… HI MOLLY!  Thanks for being an amazing writer and cook and inspiration to me, in general.  Also your daughter is the cutest and your husband makes great pizza.  …Hi.

I actually didn’t say hi, since they seemed to be enjoying some family time, and also because I wasn’t sure what I would say (the above seemed a bit over the top, at the time). I mainly just smiled from behind my giant branches and hoped no one would call me out as a creeper (holy smokes I’m such a creeper).

Then I bought some granola from Megan Gordon (of Marge Granola and an amazing, newly released cookbook) and my life was pretty much complete.  Ballard farmer’s market, you rule.

As for the rhubarb I bought at the market?  I knew only a recipe from Orangette would do. This one is the simplest as they come, and turns sour, tart stalks of rhubarb into sweet, tender, spoonable fruit.  We ate it warm, spooned over bowls of ice cream, which I think is the way to go, though the other Molly swears by eating it straight from the refrigerator.
