Level six! Level six! Level! Six!

Yeah. I’ve made it to Level six at school. Level six, for those who are counting, is the last level in the culinary program at the FCI. The last level! Gah. In a few short weeks it’ll be au revoir, culinary program, and bonjour, pastry!

It’s all very overwhelming to think about but, to be honest, I haven’t really had much time to think about it. I’ve been busy sweating over searing pans of venison and beef, trying desperately to clarify pots full of clam consommé, attempting to keep my fingers away from the bubbling oil frying our cod cakes (apparently my fingers just can’t stay away, which is unfortunate, because it’s freaking hot) and getting surly, french looks from our surly, french chef.

Chef M. is very tall and very serious, and likes to say things like “zere is nuh-zing worse den ‘ard beans. Make sure you cook zem all de way tru guys, eh? What are you, crazy?” To which you reply “No, Chef. Yes, Chef.” This will prompt him to then say something along the lines of “Who is ze best? I am. I run zis place.” Level six is great.

Pantry Pasta

With all of the new Level six recipes to learn and my internship with Liddabit Sweets still going strong, I haven’t had much time to venture out to the grocery store lately. After a long day of searing off beef tenderloin and making double batches of caramel, I found myself home at 8pm, hungry for dinner and staring into a practically empty refrigerator.

Sometimes, this game is fun. What can I make with an eggplant, half a box of crackers, a jar of coarse mustard and a rind of cheese? Sometimes I’m too tired to play, and I end up eating half a box of crackers for dinner. Tonight, though, I decided to skip the box of crackers and do something about the Sicilian-herbed olives and half jar of crème fraiche sitting in my fridge. This is the something I came up with.

Note – I’m not including amounts in this recipe, because I threw it together, all willy-nilly-like, and I don’t think it’s important to know precise measurements for this type of meal. Add however much butter and lemon and crème fraiche (and whatever else you feel like throwing in there) you like – just taste as you go, and adjust to your liking. Feel free to add red pepper flakes or some parmesan cheese to your pasta – I would have, if I’d had them around.
Ingredients:

  • Orecchiete pasta
  • olive oil
  • salt
  • butter
  • crème fraiche
  • fresh lemon juice
  • fennel seeds
  • Mt. Athos olives with Sicilian herbs (I found these at Whole Foods)
  • fresh ground pepper
  • chopped parsley

Directions:

Cook your pasta in boiling, salted water to al dente. Drain the pasta, and return it to the pot. Drizzle olive oil over pasta, and stir in a bit of butter. Add the crème fraiche, lemon juice, and fennel seeds, and stir to create a light, creamy sauce. Add the olives and pepper, to taste, and sprinkle with chopped parsley. Serve immediately.

Caramel Frosting

If you’re a fan of caramel (and I really think you ought to be), I think you’ll enjoy learning about Liddabit Sweets, the candy company where I currently intern. I’ve been spending a few days a week with the Liddabit girls, measuring out ingredients, stirring pots of boiling sugar, tempering chocolate (and then dipping things in it!),


molding lollipops, twisting caramels into wrappers,


coating fresh apples in soft, salted caramel,


and, on the weekends, selling the bundles of various deliciousness to people at the Brooklyn Flea and New Amsterdam Markets. Sweets for the sweet, and all that.


It’s pretty awesome. Not only is all of the candy handmade with local ingredients, it’s also cute and clever and, most importantly, downright delicious.

It’s so caramelly.  And chocolately.  And lollipopish.

Caramel Frosting

Adapted from Bon Appetit


This isn’t a Liddabit recipe, but I recently used this rich caramel to frost cupcakes, and I think, given it’s thick, smooth consistency, it would be pretty delightful as a coating for fresh fall apples. Just stick a thick bamboo skewer in your favorite apple (Jonagold and Honeycrisp are good choices), make this caramel and dip away. The cream cheese in the recipe is pretty unorthodox, but it gives the caramel a slight, subtle tang, which, incidentally, is surprisingly lip smacking.

Ingredients:

  • 3/4 cup heavy whipping cream
  • 6 ounces cream cheese, cut into small pieces, room temperature
  • 2 1/4 cups sugar
  • 2/3 cup water
  • 1/2 cup (1 stick) plus 1 tablespoon unsalted butter, cut into 1/2-inch cubes
  • 1/2 Tbsp sea salt

Directions:

Whisk whipping cream and cream cheese in small bowl until smooth.

Combine sugar and water in heavy medium saucepan. Stir over medium-low heat until sugar dissolves. Increase heat to high; boil without stirring until syrup is deep amber color, occasionally swirling the pan, about 10 minutes. Once the sugar has turned a nice, caramelly amber, slowly and carefully whisk in cream cheese mixture (caramel mixture will bubble vigorously). Add butter; whisk until mixture is smooth, about 1 minute.

Remove from heat; cool caramel about 10 minutes, whisking occasionally. Stir in sea salt. Use for dipping caramel apples or frosting your favorite cake.

Makes about 4 cups caramel frosting.

Curried Squash Soup with Apples, Creme Fraiche and a Popover

Well people, apparently it is almost the middle of October. How does that keep happening? I look away for one second, and all of a sudden it’s time to get another haircut and I can’t leave my apartment without a coat. A coat! Yesterday I was clamoring about the oppressive summer heat radiating from the city’s sidewalks, and today I need a coat. I bet tomorrow I’ll be asking for a warm hat and mittens.

You know what else? I’m already in level 5 at school. Level 5! Level 5 means that, when I go to class everyday, I’m not actually in “class” – I’m one of the students working the lunch shift in the school’s restaurant, L’Ecole. Kind of crazy, no? I cook lunch for people! REAL people, who will eat the REAL food that I cook for them. Almost like a real chef! …Almost.

We rotate stations in the kitchen, from garde manger (appetizers and cold salads) to entremetier (specials) to poissonier (fish) to saucier (meats and sauce) to patissier (pastry). I haven’t hit all of the stations yet, but here are a few highlights from my rotations in saucier and patissier:

Pork Osso Bucco with Risotto Milanese

A Dessert Special – Brown Butter Cake with Caramelized Bananas and Pumpkin Ice Cream

Doesn’t look half bad, huh? I’ve also been responsible for making buttermilk-poached chicken, a mango-yogurt terrine, mint-chocolate chip ice cream sandwiches and and braised rabbit, but alas – no pictures.

In addition to our everyday work in the kitchen, we level 5 students were assigned a menu project which was, incidentally, due today. The project consisted of designing a menu, including at least 4 courses, and writing a report on it, complete with pictures of your plated dishes, a wine pairing, and a food cost analysis. In short, a glorified blog post (minus the cost analysis business). Needless to say, I kind of enjoyed doing it (again, minus the cost analysis nonsense. Me and math are not the closest of friends.)

I chose to create a seasonal menu, complete with my favorite, toasty warm fall flavors (note the ample use of apples and butternut squash). Here is the menu I chose:

Course 1: amuse-bouche – ham and cheddar toast with pickled apple

Course 2: curried squash soup with apples, crème fraiche, and a popover


Course 3: herbed goat cheese and zucchini tart, served with baby greens, pumpkin seeds and apple cider vinaigrette

Course 4: chicken cassoulet with white beans, roasted Brussels sprouts and butternut squash (apologies – no photo).

Course 5: apple meringue “cupcake” with cinnamon-sugared doughnut holes


Sound like something you’d like to eat? Maybe? The squash soup, at least? Ok.

Curried Squash Soup with Apples, Crème Fraiche and a Popover

To me, squash soup is the epitome of fall – warm and smooth, with a hint of sweetness and spice. Eating it makes me want to own lots of cozy sweaters and watch football and drink hot cider. My recipes for the soup and popovers are adapted from Ina Garten and Gourmet magazine (rest in peace, old friend), respectively.

Ingredients:

For soup:

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 large yellow onions, chopped
  • 2 tablespoons curry powder
  • 5 pounds butternut squash (2 large), peeled, seeded, and cut into chunks
  • 1 1/2 pounds McIntosh apples, peeled, cored, and cut into chunks
  • 1 sprig fresh thyme
  • kosher salt and freshly ground black pepper, to taste
  • 4 cups chicken stock
  • crème fraiche, for garnish

  • pumpkin seed oil, for garnish

For popovers:

  • 1 cup sifted all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • melted, unsalted butter for brushing the pan

Directions:

Warm the butter, olive oil, onions, and curry powder in a large stockpot, uncovered, over low heat for 15 to 20 minutes, until the onions are soft and translucent. Stir occasionally, scraping the bottom of the pot.

Add the squash, apples, salt, pepper, thyme and chicken stock to the pot. Bring to a boil, cover, and cook over low heat for 30 to 40 minutes, until the squash and apples are very soft.Remove the sprig of thyme.Puree the soup coarsely with an immersion blender, or in the bowl of a food processor fitted with a steel blade.

Adjust seasoning and serve hot, garnished with a dollop of crème fraiche and a drizzle of pumpkin seed oil.

To make the popovers, first preheat the oven to 450 degrees F.

Next, sift together the flour and the salt in a medium bowl.

In a small bowl whisk together the eggs and the milk. Add the milk mixture to the flour mixture, stirring, and stir the batter until it is smooth.

In a preheated 450°F. oven heat one or two 6-cup muffin pan for 5 minutes, or until hot, and then brush the cups with the melted butter, and fill them half full with the batter (you should be able to fill about 8 muffin cups).

Bake the popovers in the middle of the 450°F oven for 20 minutes, then reduce the heat to 375°F, and bake the popovers for 20 minutes more, or until they are golden brown and crisp.

Makes roughly 3 quarts of soup and 8 popovers.

Simple Roast Chicken

You know what? I just realized that all this time I’ve been so busy ranting about marshmallow fluff and saying goodbye to summer and neglecting to post recipes, I haven’t told you a thing about level 4 at school. Not one thing! I haven’t told you about the amazing smorgasbord of a buffet my classmates and I put on for the other students, featuring a whole suckling pig, numerous dishes involving fresh figs, and banana split cupcakes.

You didn’t hear about the week I spent at the “family meal” station, frantically cooking lunch for 300 people a day and trying not to pass out. You didn’t even hear about the days I spent at the “production” station, butchering everything from whole striped bass and halibut to pork racks and beef shoulder and rabbit. And, of course, my fingers.

…Yeah. Apparently, production is where fingers go to die. Or, at least, to be slightly mangled.

Anyway, it’s really a shame you didn’t hear about any of that. And wouldn’t you know it? Level 4 ended yesterday, so I guess you’re out of luck. Sigh. It would have been fun to tell you about how awful it was to prepare the salad for family meal, chopping and washing and drying 80 (!) pounds (!) of lettuce that no one ate anyway, or how I’ve grown enormous biceps (total lie) from lifting huge vats of chicken stock in production, or about the day that I learned that one guy in my class had never heard of matzoh balls. Never heard of matzoh balls?! Oy.

Don’t those things sound like fun things to hear about? Too bad. I’m definitely not going to tell you about how Tina, Nadine and Rodney named their British-themed buffet (bangers n’ mash! fish n’ chips! sticky toffee pudding!) “King Hungry VIII,”

or how the stainless steel bowl we used to make coleslaw in family meal was roughly the size of a small swimming pool. Yeah, I think I’ll keep that to myself. I mean, maybe someday I’ll tell you about how I learned to clean and fillet fresh sardines (tiniest. bones. worst. smell.), or the lesson we got on how to make and cure our own salami, but for now, you’re just going to have to wait.

Sorry. Here, have some chicken.


Simple Roast Chicken
Adapted from Ina Garten

I think it’s important for everyone to have a solid recipe for roast chicken. It’s a fairly simple and easy dish, but when it comes out of the oven, looking gorgeous with its crispy golden skin and wafting deliciousness to the heavens, your guests will think you’re a regular Julia Child. With fall’s chill in the air and a side of cous cous and roasted veggies, it doesn’t get much better than this. It’s also delicious eaten cold for lunch, stuffed into a sandwich or shredded into your favorite recipe for chicken salad. The possibilities are endless, so what are you waiting for? Get roasting, Julia.


Ingredients:

  • 1 whole chicken
  • 2 yellow onions
  • 2 Tbsp butter, at room temperature
  • salt
  • pepper
  • 1 lemon, halved
  • 3 cloves garlic, smashed
  • 2-3 sprigs fresh thyme
  • 1 bay leaf
  • 1 piece butcher’s twine or string

For pan jus:

  • 1/2 cup white wine
  • 1 1/2 cups chicken stock
  • salt
  • pepper

Directions:

Preheat the oven to 425 degrees F.

Thickly slice the onions and arrange them on the bottom of a roasting pan. Remove the little goody bag inside the chicken containing the giblets, liver, neck and heart, and discard or use to make chicken stock. After trimming the chicken of any excess fat, rinse the chicken inside and out, and pat it dry with paper towels. Liberally salt and pepper the chicken, both inside and out. Stuff the cavity with the lemon halves, thyme, garlic, and bay leaf. Rub the outside of the chicken with butter, and sprinkle again with salt and pepper. Place the chicken on the bed of onions in the roasting pan. Tie the legs together with kitchen twine and tuck the wings under the body of the chicken.

Roast the chicken for 1 1/2 hours, or until a thermometer inserted in the thigh reads at least 145 degrees and the juices run clear when you cut between a leg and thigh.

Remove the chicken to a platter and cover with aluminum foil. Carefully, place the roasting pan with the onions on the stovetop over medium high heat. Deglaze the pan with the white wine, scraping the bottom of the pan to loosen the flavorful brown bits. Once the wine has reduced by half, add the chicken stock, and simmer for about 5 minutes, until slightly reduced. Season to taste with salt and pepper.

Slice the chicken and serve immediately with the onions and pan jus.

Makes 1 whole roast chicken.

Aunt Maggie’s Summer Tomato Sauce

It seems I owe you a recipe. I didn’t mean to be so slack about posting one, but I couldn’t very well give you the recipe for, um… spoonfuls of peanut butter and marshmallow fluff straight from the jar. Which has sort of been what I’ve been calling dinner lately. Yeah that’s right, I said marshmallow fluff. …What?

Alright, it’s embarassing. I mean, I’m supposed to be a chef! And all I can come up with for dinner is a spoonful (or, ahem, seven) of Skippy and highly-processed marshmallow cream? I feel like a sheep in chef’s clothing. But between my exhausting endeavors at school (yesterday I peeled and chopped ohhhhh, about 40 pounds of beets), my new internship at Liddabit Sweets, and the the fact that it’s now officially dark when I wake up at 6 a.m. (talk about depressing!), come dinnertime it’s all I can do to unscrew the lid of peanut butter and lift the damn spoon.

Fortunately, others I know are not so delinquent when it comes to dinner these days. My Aunt Maggie, for example… thank goodness for her. A graduate of chef school herself (she went to Le Cordon Bleu after college), Aunt Mag (also known as Aunt Babe – she’s the youngest child in my Dad’s family) is undeterred by the 6 a.m. darkness that’s been settling like a thick veil over what’s left of summertime. When the light of summer fades, Maggie knows better than to take solace in a jar of fluff. She makes tomato sauce.


Aunt Maggie’s Summer Tomato Sauce
Adapted from Real Simple Magazine

Instead of moping over summer’s end, Maggie puts summer in a jar, in the form of this tomato sauce, and freezes it. Voilà! The taste of summer, all year round.
Maggie’s tomato sauce parties are famous – she and her friends use 75 (!) pounds (!) of tomatoes – but she was nice enough to give me the proportions for an individual batch. That said, feel free to double, triple, even quadruple the recipe – trust me, this stuff will make you forget all about the impending chill of fall… and the jar of fluff in the cabinet.

Ingredients:

  • 8-10 ripe tomatoes
  • 2 Tablespoons olive oil
  • 1 medium onion, chopped
  • 4-5 cloves garlic, thinly sliced or chopped
  • 2 Tablespoons tomato paste
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/3 cup chopped basil

Directions:

Bring a pot of water to boil. Score an “X” in each tomato with a paring knife, and drop them in the boiling water for 30 seconds. Remove the tomatoes and immediately place them in a bowl of ice water. Then, peel the skins off each tomato. Cut tomatoes in half, and squeeze out as many seeds as possible. Next, chop the tomatoes coarsely.

Heat olive oil in a large pot over medium heat. Add the onion and sauté until soft, and then add the garlic and cook for a few more minutes, until fragrant. Add the tomatoes, tomato paste, salt and pepper, and simmer, covered, for one and a half hours. Turn off the heat and stir in the basil.

Serve immediately (over pasta! On a pizza! Straight up with a loaf of bread!) or portion into plastic containers and freeze.

Makes about a quart of tomato sauce.

So Long, Summer

So I know it’s Labor Day, the day that officially puts the kibosh on summer, and I suppose that’s just fine by me (I like sweaters, boots, cider and squash just as much as the next person, you see), but can someone please explain to me why, when I stopped in my local drugstore this weekend, I was met not by your usual September stock of back-to-school Hannah Montana/Jonas Brothers notebooks and pencils and pens, but rather by a hoard of witches hats and plastic orange pumpkins and shelves upon shelves of Halloween candy?

…Halloween candy! On September seventh! I mean, I’m not usually one to turn down a peanut butter cup (pumpkin-shaped or otherwise), but come on! Halloween candy on Labor Day is just downright ridiculous. Honestly, what’s the big rush? These days it seems like we only get about a week of real fall weather anyway (thanks, global warming), so why try and whisk us all into an orange and black, pointy-hatted, chocolate-stained frenzy during the first week of September?

Just simmer down there, people. Slo-o-o-wly eat the last of your fragrant yellow peaches and juicy heirloom tomatoes – there’s really no need to hurry. Savor the last few bites of summer, because pretty soon, it’s on to buttery squash and sweet, tart apples and, apparently, miniature Snickers bars shaped like ghosts. Which, incidentally, are delicious. For now, though, I think I’ll take my sweet time saying so long to a wonderful summer.

Tarte Aux Pommes (Apple Tart)

Well, it’s the first of September. Which, as you may or may not know, means two things. Number one: I am officially 25 years old. Number two: I survived the first real milestone of my culinary education – the midterm.

Whew! What a week. A quarter century followed by a quartered chicken. Or it would have been, if I’d been assigned the roast chicken for the midterm. I actually ended up getting the skate à la grenobloise (skate fillet with croutons, capers, lemon, and brown butter) and the apple tart. Which meant that, after a short written exam, I had three hours to: fillet a whole skate (if you’ve never done this, let me suggest right now that you don’t. Skate is pretty delicious – it tastes almost exactly like scallops, minus the awkward texture – but it’s covered in slime and spikes and, overall, not a fun fish to have to break down. Especially under a time crunch. I’m just saying); make a batch of buttery croutons; turn four potatoes into twelve perfect little cocottes and then boil them until tender; brown the skate fillets in clarified butter; throw together a quick brown butter sauce with lemon and capers; mix up a batch of pâte sucrée; roll it out; fill it with apple compote and perfectly sliced apples; bake and cool the apple tart; glaze it; slice it; whip up a batch of soft, pillowy chantilly (whipped cream); plate both dishes and have them out at 1:06 and 1:48, respectively. And breathe.

The good news is I think I passed. So I live to see the level 4 kitchens! And another day at 25. Yeesh. I suppose it’s a nice, solid, round number. I think I’ll stick with it for awhile… at least a year, anyway.

Tarte Aux Pommes (Apple Tart)


Here you go – a classic apple tart. Very french, and very delicious. The best part? I will not be timing you.

Ingredients: For the Dough:

  • 1 and 3/4 cups all-purpose flour
  • 7 tablespoons butter, very cold, cut into small pieces
  • 1 teaspoon salt
  • 1.5 tablespoons granulated sugar
  • 1 egg mixed with 2 teaspoons water

For the Apple Compote:

  • 3 Granny Smith apples, peeled and cored, cut into medium-sized chunks
  • 2 tablespoons sugar
  • juice of 1/2 lemon
  • 2 tablespoons water

For the Apple Topping:

  • 2-3 Golden Delicious apples
  • juice of 1/2 lemon
  • 2 tablespoons melted butter
  • 3 tablespoons apricot jelly
  • 2 tablespoons water

Directions:

First, make the dough. Sift together the flour, sugar and salt in a bowl. Mix the cold, cubed butter into the dry ingredients using two forks or clean fingertips, until the butter is incorporated and the mixture has a sandy texture. Form a well in the butter-flour mixture and add the egg/water mixture into the well.

Begin to combine the liquid into the flour-butter mixture, being careful not to overwork the dough (overworked dough leads to tough, heavy crust). If the dough seems too dry (if it’s too flaky and won’t stick together), add a few drops of ice-water (only a few small drops at a time!) until it comes together.

Gather the dough, form it into a flat disc, and wrap in plastic wrap. Chill in the refrigerator at least 30 minutes.

Meanwhile, make the compote. Put the Granny Smiths, sugar, water, and lemon juice in a sauté pan over medium-low heat, and cook slowly under a parchment paper lid, until the apples are soft and have exuded their juices. Remove the parchment and cook the apples until most of the liquid has evaporated. Place compote in a bowl and chill immediately in the refrigerator or freezer.

Preheat the oven to 425ºF. When the dough is thoroughly rested and chilled, roll it out on a floured surface and gently press it into an 8-inch tart pan. Spread the cold apple compote in an even layer on the bottom of the pastry shell.

Peel the Golden Delicious apples, cut them in half, and core them. Slice the apples in very thin slices horizontally, and arrange them decoratively on top of the apple compote, making sure to place the slices very close together (the apples will shrink in the oven, so be generous with the little slices and be sure to overlap them on top of each other).

Brush or pour the melted butter over the tart, and bake it in the 425º oven for 10 minutes. Lower the heat to 350ºF and bake for an additional 50-60 minutes. When it’s ready, the apples should be soft and brown on the edges, and the pastry should be golden brown. Once the tart is finished, mix the apricot jelly and water together and heat on the stovetop until runny. Brush the apricot glaze over the warm tart, and let the tart cool before slicing.

Serve with a dollop of whipped cream or some cool vanilla ice cream.

Serves 8.

Nadine’s Creamy Brazilian Flan

Anyone still here? I have sort of an odd request. It involves flan. Could you make me some?

I’m not usually a big flan person – if I’m going the custard route, I usually choose something like crème brulée (crunchy crust!) or good, old-fashioned pudding (nostalgia!) – but never flan. …Flan. The name alone pretty much says it all. Flahhhn. Blahhh. Cold and jiggly. Sort of weird, if you want to know the truth.

Apparently, though, not all flan has to be so… bleh. My friend Nadine introduced me to Brazilian flan yesterday, and it was decidedly not bleh. It was creamy and caramely (not a real word, just go with it) and the perfect texture. None of this cold and jiggly nonsense.

I met Nadine at school. She’s Brazilian and hilarious and, for the past three months, we’ve been bonding over sweaty kitchens, funny french accents, and lemon tart. Nadine always looks at me and giggles whenever Chef D. says “remember,” because we decided that, with his thick Parisian accent, it sounds like he’s actually saying “Camembert.” Which is actually sort of fitting. “And, uh, Camembert to strain your cuh-stahrd for de leh-mon tart beh-fore you bake eet, so eet gets, uh, nice and smooz.” (Giggle.) Nadine taught me how to say “shut up” in Portugese. I introduced her to the Shake Shack burger. She taught me about Brazilian flan.

Louis, I think this is the start of a beautiful friendship.

Nadine’s Creamy Brazilian Flan (Pudim de leite condensado)

I still don’t have a camera (damn you, greenmarket camera thief), so unfortunately we are still sans photos, but trust me when I say that this is one gorgeous flan. It looks good enough to… um… eat. Please do, and enjoy.

Ingredients:

  • 1 cup sugar
  • 4 eggs, separated
  • 1 can sweetened condensed milk
  • 1 cup milk

Directions:

Preheat oven to 350ºF. In a small saucepan, melt the cup of sugar over low heat, stirring. Once the sugar has caramelized, becoming a nice, golden brown syrup, pour it immediately into a baking pan (a glass pie pan would work nicely), swirling so that the syrup coats all sides of the dish. Set aside to to cool.

In a food processor or electric mixer on high speed, blend the egg yolks until thick and creamy, about 5 minutes. Add the condensed milk, regular milk and egg whites, and continue blending until all ingredients are combined. Pour the egg mixture into the pan with the caramel and cover with aluminum foil.

Line a roasting pan with parchment paper. Place flan dish in the roasting pan (on top of the parchment), and place the roasting pan on oven rack. Fill the roasting pan with boiling water to reach halfway up the sides of the flan dish.

Bake the flan until a knife inserted 1-inch from the edge comes out clean, 40-50 minutes. The center of the flan will still be soft. Allow flan to cool before unmolding onto a plate. Cut into wedges, and refrigerate before serving.

Roasted Rainbow Carrots with Rosemary & Mint

I’m pretty sure today is the hottest day of the year here in New York City. If it’s not, it certainly feels like it. The Weather Channel clocks us in at 93 degrees (with a “feels like” of 98 degrees and close to 50% humidity), which means that, down in the Level 3 kitchen at school, it’s about oh… a million bazillion degrees Farenheit. Which means wilted salad greens and grainy whipped cream and silly, long-sleeved marshmallow uniforms stuck to hot, sweaty skin. Appetizing, no?

To sum things up, it’s hot. Damn hot. It doesn’t help that in our new, more advanced (and more time-sensitive) Level 3 format I’m constantly running around like a mad woman, chopping and filleting and stirring and straining and spooning and tasting and plating and reminding myself to breathe. Today, one of the dishes I was responsible for was grilled salmon with white wine herb sauce. Doesn’t that sound good? It does, until you find yourself sweating over a blazing grill, desperately willing the fish to go ahead and be done already, before you reach your boiling point and actually burst into flames. I wonder if that’s possible. You know, to flambé yourself.

In all honesty, it’s not so bad. I mean, I did sign up for cooking school in August. Mostly I’m just cranky because I lost my camera this weekend at the Union Square Green Market. At least, I think I lost it. It could have been stolen… snatched up by a seedy young thief hidden among the throngs of people buying peaches and tomatoes and fresh herbs. I sort of like that idea better – it makes me feel like less of an irresponsible camera-loser. At any rate, I’m devastated. I’ve been feeling lost and, frankly, naked, since Saturday. Though I did pick up some wonderful heirloom tomatoes and a bunch of small, multicolored carrots at the market. They’re really beautiful – knobbly stalks of purple and orange and white. Not that you’ll get to see them. Or any of the other pretty pictures I took on Saturday – barrels of shiny, purple and white eggplants, wheels of yellow, raw-milk cheese, bunches of plump and pointy red radishes. Sigh. Such a bummer.

Luckily, before my poor camera was seized by a hostile market-goer, I was able to upload a few pictures from the fiery depths of Hades – I mean, Level 3 at school. Take a good, long look, because there’s nothing more where those came from. Sob.

Here’s to a cooler week ahead! And the miraculous reappearance of my camera! …No? Well fine, but one of the two would be nice.

Roasted Rainbow Carrots with Rosemary and Mint

Colorful carrots are all over the farmer’s markets these days – they’re sweet and bright and beautiful, and I suggest that, if you haven’t already, you give them a try. Just keep a tight grip on your valuables – I hear there’s a camera thief lurking around 14th Street.

Ingredients:

  • 1 bunch rainbow carrots, whole, scrubbed and trimmed
  • kosher salt
  • fresh ground pepper
  • olive oil
  • fresh rosemary leaves, chopped

Directions:

Preheat the oven to 350º. Toss the carrots with the olive oil to coat. Sprinkle liberally with salt and pepper, and place them on a sheet pan. Roast the carrots in the oven until slightly wrinkly and fork tender, about 10 minutes (depending on the size of the carrots). Remove from oven and immediately toss with chopped rosemary and mint, to taste. I prefer to use less rosemary and a lot of mint. Serve with a few slices of toasted bread and a hunk of sharp cheese.

Note: I like the look of these small carrots whole, but feel free to slice them up before roasting, if you prefer. Just be sure to adjust the roasting time accordingly (smaller pieces will roast faster than larger ones). Also, you’ll notice I didn’t mention anything about peeling the carrots – peeling removes the pretty, outer purple layer (of the purple carrots, anyway), so I opted to scrub them thoroughly and eat them skin-on. Yum.

Celebration Cake with Chocolate Frosting

Cheers, Aunt Marie!

My Aunt Marie, who you may already know about because she makes the most fantastic granola around, has a new book out today! Check out Ask Dr. Marie: Straight Talk and Reassuring Answers to Your Most Private Questions. It’s a comprehensive on women’s health and sexuality – it’s got chapters on everything from “How to Get the Health Care You Need at Every Age” to “Sex Smarts: The Thinking Woman’s Guide to Having Fun in Bed.” Intriguing, no?

I think every gal (or guy who loves a gal) should have a copy of Marie’s book. Then again, I suppose I’m sort of biased… she is my Aunt, afterall. Still, she is a rather remarkable Aunt. I mean, in her lifetime, the woman has gone from Nurse to Internist to women’s health expert to guest on Oprah to ABC News Medical Correspondant… all while raising a family and being a wonderful Aunt and inventing a damn fine recipe for granola. And if that’s not something to celebrate, I don’t know what is. Congrats, Aunt Mur!


Celebration Cake

Okay, so, don’t freak out. First, let me start out by saying that this cake is delicious. It’s light, moist, flavorful, and, um… from a box. (!) Damn my eyes. I do have a “real” recipe for yellow cake, and it’s actually quite good, but who wants to fuss around with measuring flour and sugar and blah blah blah and de whole freakin’ zoo when you’re at the beach on vacation and it’s your uncle’s birthday and it’s an insanely gorgeous day and come on! Give a girl a break. That’s right, I said it. It’s from a box! And it tastes good! Sue me.

Ahem. Anyway, at least the chocolate frosting is homemade. I adapted the recipe from Lynn Kearney at The Food Network Kitchens.

Ingredients:

For cake:

  • 2 boxes yellow cake mix (and various accoutrement – eggs, oil, etc.)
  • 3 9-inch round cake pans
  • store-bought sugar flowers or candy, for decorating

For frosting:

  • 4 ounces bittersweet chocolate
  • 4 tablespoons butter
  • 4 cups confectioners’ sugar, sifted
  • 1.5 teaspoons vanilla extract
  • 3 to 8 tablespoons milk

Directions:

Bake the cakes according to the instructions on the (gasp!) box. Let cool completely before frosting.

Make the frosting: in a bowl set over a pot of simmering water, melt the chocolate with the butter. Remove from heat and allow to cool for a few minutes. In the bowl of an electric mixer, add chocolate mixter and sifted confectioners’ sugar. Beat until well incorporated (despite the sifting, there may still be beads of sugar in the chocolate. This is fine). Add the vanilla and the milk, a tablespoon at a time, until the frosting is fluffy and has reached a nice, spreadable consistency.

Layer the cooled cakes, one on top of the other, with a thin layer of frosting in between. Ice the top and sides of cake, and decorate with flowers or candy.

Makes one 3-layer, 9-inch cake.
